  1. Heat 45 ml oil in a wok over medium heat.

  2. Add sliced ginger and cook 30 s.

  3. Lower heat, add sugar and dissolve in oil.

Stir-fry bamboo

  1. Add bamboo shoots and increase heat. Stir-fry until edges lightly browned.

Phase 3

Braise and reduce

  1. Add Shaoxing wine, light and dark soy sauce, and water (237 ml). Cover and cook 10 min over medium heat.
