  1. Rinse mochigome thoroughly.

  2. Mix water (475 ml) with 1–2 drops of red food coloring.

  3. Cook mochigome in rice cooker with colored water. Add water if needed to cover.

Mochi paste forming

  1. Pound cooked rice until a sticky paste forms. Let cool.

Phase 3

Filling and shaping

  1. Divide anko into 12 balls.

  2. Take ~60 ml of rice paste, flatten and wrap one anko ball.

  3. Use plastic wrap to seal and shape each mochi into an oval.
