  1. Peel ginger and slice very thin.

  2. Cover with water in a saucepan and simmer 5 min. Drain and discard water.

  1. Return ginger to saucepan. Add water (120 ml), sugar (15 ml), soy sauce (30 ml) and mirin (30 ml).

  2. Bring to boil, then simmer 20–30 min until sauce evaporates.
