Broth Preparation

  1. Add soy sauce, sugar and salt to Vegetable Dashi broth (base broth).

  2. Heat over medium heat until it reaches a gentle simmer.

Toppings Preparation

  1. Squeeze water from boiled spinach.

  2. Cut spinach into 8 centimeter pieces.

  3. Cut fried tofu (Inari Age or Atsuage) into 2.5 centimeter pieces.

Cooking and Noodle Assembly

  1. Bring 2 liters of water to boil in a large pot.

  2. Also heat 1 liter of water in a separate pot.

  3. Put soba noodles in the 2 liters of hot water and stir well.

  4. Boil according to package instructions for your noodles.

  5. Rinse noodles under hot water after cooked, then put back in the separately heated hot water (the 1 liter of water).

  6. Drain water from soba in a colander and serve in a donburi bowl.

  7. Pour broth over noodles and top with spinach, fried tofu, and tenkasu. Enjoy this plant-based version like the Soba Shop pirates!
