Spiced fries and sauce
Cut the potatoes into sticks, dry them well and mix them with oil, salt, onion powder, garlic powder and paprika.

Bake them for 30–35 min at 200°C, moving them halfway through cooking so they become crispy.

While they bake, mix the mayonnaise with gochujang and sesame oil; add lemon juice if desired. Set aside.

Prepare bacon, onion, tortilla and bread
Fry the bacon until crispy and set aside. In the same pan, brown the onion with a pinch of salt until tender and slightly caramelized.

With a little oil, brown the corn tortilla on both sides until crispy; place it on absorbent paper.

Melt butter in the pan and toast the brioche buns until golden and firm.

Cook and assemble the burger
Season the meat with salt and pepper just before cooking it.
