  2. Strain, return to pot, add kombu 15 min then remove.

  3. Add sake, soy sauce and sugar. Dissolve miso with broth and add.

  1. Mix silken tofu, chickpea flour, turmeric and kala namak. Steam or pan sear until set.

  2. Marinate in soy sauce, mirin and water 1–12 h.

  1. Sear extra-firm tofu. Cook with water, sake, soy sauce, sugar and ginger 45–60 min until glazed.
