Soak mushrooms in hot water for 20 minutes and slice thinly. Peel shrimp leaving the tails, remove the vein and pat thoroughly dry.

Dip shrimp in batter and fry in batches for 3–4 minutes until cooked and opaque. Drain on a rack.
