Sugar threads
Prepare a tray with parchment.
Using a fork, lift thin threads of hot sugar and flick over the tray.
Tip: Prepare a dry tray before starting. An adult handles the hot caramel; let threads cool before touching. This technique makes crisp threads, different from machine-spun candy floss.
Repeat to form a sugar cloud.
Assemble and serve
Once cooled, gather threads by hand and form balls or spirals.
