Phase 1

Rice and mushroom soak

  1. Rinse rice and drain for 30 minutes. Transfer to rice cooker.

  2. Soak dried shiitake in 355 ml warm water for 20 minutes. Remove stems and slice caps.

  3. Reserve 237 ml of the soaking water.

  4. Add reserved soaking water, vegetable dashi (15 ml) and sake (45 ml) to the rice. Rest 30 minutes.

  1. Cut extra-firm tofu into small bite-size cubes (or use maitake).

  2. Blanch fried tofu to remove excess oil; halve and slice thinly.

  3. Cut carrots into thin 3 cm matchsticks.

Phase 3

Cooking and finishing

  1. Before cooking, add firm tofu (or maitake), shiitake, kombu, fried tofu, carrot, soy sauce and salt to the rice. Reserve peas.

  2. Cook rice as usual in the rice cooker.

  3. When done, gently fold in the green peas.
