Phase 1

Preparation

  1. Wash vegetables. Dice daikon, carrot and potato into 1 cm pieces, chop onion, slice leafy vegetables, cube tofu if included and cut the listed meat or fish into small pieces.

Cooking

  1. Heat the listed oil in a pot. Sauté onion and daikon, carrot and potato for 5 minutes over medium heat.

  2. Add dashi. Bring to a boil, lower the heat and simmer for 15 minutes until the roots begin to soften.

  3. Add pork and simmer for 10 minutes. Check that meat is cooked through, any chicken or pork reaches 75 °C, seafood is opaque and vegetables are tender.

    Tip: Add leafy vegetables late so they keep their shape. Check root vegetables with a fork before adding protein.

  4. Turn off the heat. Dissolve miso in a ladle of stock and stir it back into the pot.

  1. Finely slice the scallions, divide soup between bowls and finish with scallions. Serve hot.
