Timer · 30 minPreheat oven to 180 °C. Line a 20 cm tin with pastry, prick it and cover with parchment and baking weights.
Cooking
Bake for 15 minutes; remove weights and bake for 10 more until golden. Cool completely.
Timer · 25 minBeat cream cheese with the remaining sugar. Whip cream and gently fold into cheese.
Tip: Fill only once the pastry shell is completely cool; heat softens the cream and makes pastry soggy.
