  1. Preheat oven to 200 °C. Pat chicken dry and cut vegetables into 2 cm pieces.

  1. Toss vegetables with half the oil, salt and pepper and place on a tray.

  2. Rub chicken with the remaining oil, garlic and thyme. Place skin-side up over the vegetables.
