Rice and mushroom soak

  1. Rinse rice and drain for 30 minutes. Transfer to rice cooker.

  2. Soak dried shiitake in 355 ml warm water for 20 minutes. Remove stems and slice caps.

  3. Reserve 237 ml of the soaking water.

  4. Add reserved soaking water, dashi (15 ml) and sake (45 ml) to the rice. Rest 30 minutes.

  2. Blanch fried tofu to remove excess oil; halve and slice thinly.

  3. Cut carrots into thin 3 cm matchsticks.

  1. Before cooking, add chicken, shiitake, kombu, fried tofu, carrot, soy sauce and salt to the rice. Reserve peas.
