Preparation
Pat pork cutlets dry, snip the edge connective tissue and flatten to 1 cm thick. Season with the listed salt and pepper.
Set out three plates: flour, beaten egg and panko. Coat each piece in flour, then egg, then panko.
Tip: Shake off excess flour before dipping in egg and gently press on panko; an overly thick coating can fall off.
Cooking
Heat the oil to 170 °C in a deep pan filled no more than halfway.
Fry in batches for 5–7 minutes, turning carefully. Check meat reaches 75 °C at the centre; fish should be opaque and flake easily.
